Healthy First Birthday Cake Recipe

birthday_cakeThis recipe for a healthy, first birthday cake is sugar free making it ideal for kids. Made exceptionally moist and sweet from the apple juice and sauce, we partnered them with fragrant cinnamon, and plump, juicy raisins. A very simple, easy, and healthy first birthday cake recipe.

Ingredients To Make Healthy First Birthday Cake Recipe:
2 1/2 cups thinly sliced carrots
2 1/2 cups apple juice concentrate (you may use slightly less)
1 1/2 cups raisins
Vegetable Spray/Shortening
2 cups whole-wheat flour
1/2 cup vegetable oil
2 whole eggs
4 egg whites
1 tablespoon vanilla extract
3/4 cup unsweetened applesauce
1/2 cup wheat germ
2 Tbsp low sodium baking powder
1 Tbsp ground cinnamon

Directions To Make Healthy First Birthday Cake:

Prep: Preheat oven to 350 F. Line two 9 inch square cake pans with waxed paper and spray the paper with vegetable spray/shortening.

1. Combine the carrots with 1 cup plus 2 tablespoons of the juice concentrate in a medium size saucepan.
2. Bring to a boil, then lower the heat and simmer, covered, until carrots are tender, 15 to 20 mins. Puree in a blender of food processor until smooth.
3. Add the raisins and process until finely chopped. Let mixture cool.
4. Combine the flour, wheat germ, baking powder, and cinnamon in a large mixing bowl. Add 1 1/4 cups juice concentrate, the oil, eggs, egg whites, and vanilla; beat just until well mixed. Fold in the carrot puree and applesauce. Pour the batter into the prepared cake pans.
5. Bake until a knife inserted in the center comes out clean, 35 to 40 mins. Cool briefly in the pans, then turn out onto wire racks to cool completely. When cool, frost with Cream Cheese Frosting below or sprinkle a wee bit of powdered sugar if desired

Ingredients to make Birthday Cheesecake

4 pk (8 oz. ea) cream cheese
2 ea Med eggs
1 c Sugar, less 2 Tbsp.
1 ts Vanilla
2 tb Cornstarch
1 c Sour cream
1 ts Almond extract

Crust:
2 c Graham cracker crumbs
1 ea Stick of butter, melted
2 tb Sugar (from above cup)

Directions to make Birthday Cheesecake

Step 1:For crust: Mix the 2 T sugar with crumbs. Add melted butter. Place in a 9\” springform pan. (Mixture will go at least 1\” up the sides.) Chill this crust in the freezer while you make the filling.
Step 2:Filling: Preheat oven to 450. Beat the cream cheese with sugar, eggs, vanilla and cornstarch. (A food processor works great for this.) Blend until very smooth. Add the sour cream and almond extract. Pour into the chilled crust. Bake 10 minutes.
Step 3:Bake 10 minutes. Reduce temperature to 200 and bake for 45 minutes more. Now turn off the oven completely and leave cheesecake in with the door slightly ajar for 2 or 3 more hours. Chill.

bdayck Three Layer Chocolate Birthday Cake - These oh so decadent, three layer, choclate birthday cake is so moist and delicious. Boxed devils food cake mix provides the base and then we added even more chocolate and sour cream before oven baking in layers. A little raspberry jam added to the chocolate frosting adds a fresh touch.

Ingredients to make Three Layer Chocolate Birthday Cake

1 box devil’s food cake mix (1 pound 2.25 ounces)
1 cup water
1/3 cup vegetable oil
3 large eggs
1 teaspoon vanilla extract
1 cup sour cream
2 12-ounce packages semisweet chocolate chips (4 cups)

1/2 cup seedless raspberry jam
3 tablespoons unsalted butter
2 cups powdered sugar

Directions to make Three Layer Chocolate Birthday Cake

Step 1:Position rack in center of oven and preheat to 350°F. Butter three 8-inch-diameter nonstick cake pans with 1 1/2-inch-high sides. Place devil\’s food cake mix, 1 cup water, 1/3 cup vegetable oil, eggs, vanilla extract and 1/4 cup sour cream in large bowl. Using electric mixer, beat batter 2 minutes. Stir in 1 cup semisweet chocolate chips.
Step 2:Divide batter among prepared pans (about 1 3/4 cups batter for each). Bake until tester inserted into center of cake layers comes out clean, about 25 minutes. Cool cake layers in pans on racks 15 minutes. Run small sharp knife between pan sides and cake layers to loosen. Turn out onto racks; cool completely. Bring 1/2 cup raspberry jam and 3 tablespoons unsalted butter to simmer in heavy large saucepan over medium heat, stirring often. Remove from heat. Add remaining 3 cups semisweet chocolate chips and stir until melted. Add remaining 3/4 cup sour cream and 2 cups powdered sugar. Using electric mixer, beat frosting in pan until smooth and thick, about 2 minutes.
Step 3:Place 1 cake layer on platter. Spread 3/4 cup frosting over. Top with second cake layer. Spread 3/4 cup frosting over. Top with third cake layer. Chill cake until frosting sets slightly, about 15 minutes. Spread remaining frosting in swirls over top and sides of cake. (Can be prepared 1 day ahead. Cover with cake dome and let stand at room temperature.)

Ingredients to make Best Friend Birthday Cake

1 1/2 cups All-Purpose flour
1 1/2 tsp. Baking powder
1/2 cup Margarine, softened
1/2 cup Corn oil
1 Jar strained beef or liver baby food (2 1/2-ounce)
4 Eggs
3 Strips dog beef jerky, crumbled (optional)
Plain yogurt or cottage cheese, for icing

Directions to make Best Friend Birthday Cake

Step 1:Sift flour and baking powder together; set aside.
Step 2:In large bowl, with electric mixer at medium speed, cream margarine until smooth. Add corn oil, baby food and eggs; mix until smooth. At low speed, gradually beat flour mixture into beef mixture until batter is smooth. Fold in beef jerky. Pour batter into well-greased and floured 8\”x5\”x3\” loaf pan. Bake in a preheated 325F. oven 70 minutes.
Step 3:Let cool on wire rack a few minutes before removing, ice with cottage cheese or yougurt.

birthday Birthday Bugs - Try something new at your next birthday party, break away from the ordinary and try these kid friendly “bugs”! Made mostly of candy, with a bit of chocolate frosting, how can kids not love them?

Ingredients to make Birthday Bugs

24 soft snack-size candy bars
144 1-inch pieces licorice pieces,any color
1 cup prepared chocolate frosting
48 yellow candy coated chocolates
Candy-coated milk chocolate sprinkles

Directions to make Birthday Bugs

Step 1:Using a skewer, poke 3 holes into each long side of the candy bars. Insert licorice in holes as the bug’s legs.
Step 2:Spoon frosting into pastry bag with small plain tip or small zipper-lock bag with a corner snipped. Pipe 2 small dots on one short end of candy bar and attach the candy coated chocolates as the eyes.
Step 3:Pipe dots on top of candy eyes and on body. Press Chocolate Shoppe pieces on frosting dots on the body.
